- Aubergine - 2 medium-sized
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Fresh rosemary - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Balsamic vinegar - 1 tablespoon
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Preheat your grill or grill pan over medium heat.
- Wash the aubergines and slice them into 1 cm thick rounds.
- In a bowl, mix olive oil, minced garlic, chopped thyme, chopped rosemary, salt, and black pepper.
- Brush both sides of the aubergine slices with the olive oil mixture.
- Place the aubergine slices on the grill and cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
- Remove from the grill and drizzle with balsamic vinegar.
- If desired, sprinkle grated Parmesan cheese on top while still warm.
- Serve immediately as a side dish.
