Ingredients

  • Aubergine - 2 medium-sized
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Balsamic vinegar - 1 tablespoon
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. Wash the aubergines and slice them into 1 cm thick rounds.
  3. In a bowl, mix olive oil, minced garlic, chopped thyme, chopped rosemary, salt, and black pepper.
  4. Brush both sides of the aubergine slices with the olive oil mixture.
  5. Place the aubergine slices on the grill and cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
  6. Remove from the grill and drizzle with balsamic vinegar.
  7. If desired, sprinkle grated Parmesan cheese on top while still warm.
  8. Serve immediately as a side dish.
