Ingredients
- Globe artichokes - 2 large
- Olive oil - 3 tablespoons
- Red wine vinegar - 2 tablespoons
- Dijon mustard - 1 teaspoon
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Fill a large pot with water and add a pinch of salt, then bring it to a boil.
- While the water is heating, trim the artichokes by cutting off the top third and removing the tough outer leaves.
- Once the water is boiling, add the artichokes and cook for about 25 minutes, or until the outer leaves can be easily pulled off.
- While the artichokes are cooking, prepare the vinaigrette by whisking together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper in a bowl.
- After the artichokes are cooked, transfer them to a plate and let them cool slightly.
- Once cooled, cut the artichokes in half lengthwise and remove the fuzzy choke from the center.
- Drizzle the vinaigrette over the artichokes and sprinkle with fresh parsley.
- Serve warm or at room temperature.
