Ingredients

  • Globe artichokes - 2 large
  • Olive oil - 3 tablespoons
  • Red wine vinegar - 2 tablespoons
  • Dijon mustard - 1 teaspoon
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Fill a large pot with water and add a pinch of salt, then bring it to a boil.
  2. While the water is heating, trim the artichokes by cutting off the top third and removing the tough outer leaves.
  3. Once the water is boiling, add the artichokes and cook for about 25 minutes, or until the outer leaves can be easily pulled off.
  4. While the artichokes are cooking, prepare the vinaigrette by whisking together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper in a bowl.
  5. After the artichokes are cooked, transfer them to a plate and let them cool slightly.
  6. Once cooled, cut the artichokes in half lengthwise and remove the fuzzy choke from the center.
  7. Drizzle the vinaigrette over the artichokes and sprinkle with fresh parsley.
  8. Serve warm or at room temperature.
