- Psyllium husk - 1 tablespoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Water - 2 tablespoons (if needed)
- Grated Parmesan cheese - 30 grams
- Fresh basil - for garnish
Steps
- In a mixing bowl, combine almond flour, psyllium husk, and salt.

- If the dough is too dry, add water, one tablespoon at a time, until the dough is pliable but not sticky.
- Divide the dough into four equal portions and roll each portion into a long rope, about 1 cm thick.
- Cut the ropes into 2 cm pieces to form the gnocchi.
- Using a fork, gently press each piece to create the classic gnocchi ridges.
- Bring a pot of salted water to a boil and carefully drop in the gnocchi.
- Cook for 2-3 minutes or until the gnocchi float to the surface, indicating they are done.
- Remove the gnocchi with a slotted spoon and place them on a plate.
- Serve warm, garnished with grated Parmesan cheese and fresh basil.
