Ingredients

  • Almond flour - 200 grams
  • Egg - 1 large
  • Psyllium husk - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Water - 2 tablespoons (if needed)
  • Grated Parmesan cheese - 30 grams
  • Fresh basil - for garnish

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk, and salt.
  2. Add the egg and olive oil to the dry ingredients and mix until a dough forms.
  3. If the dough is too dry, add water, one tablespoon at a time, until the dough is pliable but not sticky.
  4. Divide the dough into four equal portions and roll each portion into a long rope, about 1 cm thick.
  5. Cut the ropes into 2 cm pieces to form the gnocchi.
  6. Using a fork, gently press each piece to create the classic gnocchi ridges.
  7. Bring a pot of salted water to a boil and carefully drop in the gnocchi.
  8. Cook for 2-3 minutes or until the gnocchi float to the surface, indicating they are done.
  9. Remove the gnocchi with a slotted spoon and place them on a plate.
  10. Serve warm, garnished with grated Parmesan cheese and fresh basil.
