- Water - 100 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Sesame oil - 1 tablespoon
- Vegetable oil - for frying
Steps
- In a mixing bowl, combine the grated zucchini, chopped scallions, all-purpose flour, water, salt, black pepper, and sesame oil. Mix until a thick batter forms.
- Heat a non-stick frying pan over medium heat and add a tablespoon of vegetable oil.
- Pour half of the batter into the pan, spreading it evenly to form a round cake about 1 cm thick.
- Cook for about 5-7 minutes until the bottom is golden brown, then carefully flip the cake using a spatula and cook the other side for another 5-7 minutes.
- Repeat the process with the remaining batter to make a second cake.
- Once both cakes are cooked, remove them from the pan and drain on paper towels to remove excess oil.
- Cut into wedges and serve hot, optionally with soy sauce or chili sauce for dipping.
