Ingredients

  • Zucchini - 2 medium-sized
  • Egg - 2 large
  • Scallions - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red chili flakes - 1/4 teaspoon (optional)

Steps

  1. Spiralize the zucchinis using a spiralizer or julienne peeler to create noodles.
  2. In a large skillet, heat the sesame oil over medium heat.
  3. Add the minced garlic and chopped scallions to the skillet, sautéing for about 1 minute until fragrant.
  4. Add the zucchini noodles to the skillet and stir-fry for 3-4 minutes until they are tender but still slightly crisp.
  5. Push the zucchini noodles to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until fully cooked.
  6. Mix the scrambled eggs with the zucchini noodles and pour in the soy sauce, salt, black pepper, and red chili flakes if using. Stir well to combine.
  7. Cook for an additional 1-2 minutes, allowing the flavors to meld together.
  8. Serve hot, garnished with extra scallions if desired.
