Ingredients

  • Zucchini - 2 medium, spiralized
  • Eggs - 4 large
  • Bell pepper - 1 medium, sliced
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons (or coconut aminos for Keto)
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Heat the olive oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and sliced bell pepper, stir-frying for 2-3 minutes until fragrant and slightly tender.
