Ingredients

  • Zucchini - 2 medium (about 400g)
  • Ground pork - 200g
  • Sesame oil - 1 tablespoon
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Peanut butter (natural) - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2, sliced
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Crushed peanuts - 2 tablespoons (for garnish)

Steps

  1. Spiralize the zucchinis using a spiralizer or julienne slicer to create zucchini noodles. Set aside.
  2. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
  3. Add the ground pork to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  4. In a small bowl, combine the soy sauce, chili oil, peanut butter, and rice vinegar. Mix until smooth and set aside.
  5. Once the pork is cooked, pour the sauce over the meat and stir well to combine. Let it simmer for 2-3 minutes to heat through.
  6. Add the zucchini noodles to the skillet, tossing gently to combine with the pork and sauce. Cook for an additional 2-3 minutes until the zucchini noodles are slightly softened but still firm.
  7. Season with salt to taste, then remove from heat. Serve hot, garnished with sliced green onions, chopped cilantro, and crushed peanuts.
