- Water - 200 ml
- Zucchini - 200 grams, grated
- Green onion - 2, finely chopped
- Garlic - 2 cloves, minced
- Soy sauce - 1 tablespoon
- Black sesame seeds - 1 tablespoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Oil - 2 tablespoons (for frying)
Steps
- In a mixing bowl, combine the all-purpose flour and water to create a smooth batter. Let it rest for 10 minutes.
- In another bowl, mix the grated zucchini, chopped green onion, minced garlic, soy sauce, black sesame seeds, salt, and pepper until well combined.
- Heat 1 tablespoon of oil in a non-stick skillet over medium heat.
- Pour half of the batter into the skillet, spreading it evenly to form a pancake. Cook for about 2-3 minutes until the bottom is golden brown.
- Spoon half of the zucchini mixture onto the pancake and fold it in half. Cook for another 2-3 minutes until the zucchini is tender and the pancake is crispy.
- Remove from the skillet and repeat with the remaining batter and zucchini mixture to make the second Jianbing.
- Serve hot, optionally with extra soy sauce or chili sauce for dipping.
