Ingredients

  • All-purpose flour - 100 grams
  • Water - 200 ml
  • Zucchini - 200 grams, grated
  • Green onion - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Black sesame seeds - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Oil - 2 tablespoons (for frying)

Steps

  1. In a mixing bowl, combine the all-purpose flour and water to create a smooth batter. Let it rest for 10 minutes.
  2. In another bowl, mix the grated zucchini, chopped green onion, minced garlic, soy sauce, black sesame seeds, salt, and pepper until well combined.
  3. Heat 1 tablespoon of oil in a non-stick skillet over medium heat.
  4. Pour half of the batter into the skillet, spreading it evenly to form a pancake. Cook for about 2-3 minutes until the bottom is golden brown.
  5. Spoon half of the zucchini mixture onto the pancake and fold it in half. Cook for another 2-3 minutes until the zucchini is tender and the pancake is crispy.
  6. Remove from the skillet and repeat with the remaining batter and zucchini mixture to make the second Jianbing.
  7. Serve hot, optionally with extra soy sauce or chili sauce for dipping.
