- Zucchini - 200 grams, sliced
- Firm tofu - 150 grams, cubed
- Bell pepper - 100 grams, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Cornstarch - 1 teaspoon
- Water - 2 tablespoons
- Green onions - 2 stalks, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
- In a bowl, mix soy sauce, cornstarch, and water to make a sauce; set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
- In the same skillet, add garlic, ginger, and bell pepper; stir-fry for 2-3 minutes until fragrant.
- Add the sliced zucchini to the skillet and continue to stir-fry for another 3-4 minutes until tender-crisp.
- Return the tofu to the skillet, pour the sauce over the mixture, and stir well to combine.
- Cook for an additional 2 minutes, allowing the sauce to thicken slightly.
- Season with salt and black pepper to taste.
- Garnish with chopped green onions before serving.
