Ingredients

  • Zucchini - 200 grams, sliced
  • Firm tofu - 150 grams, cubed
  • Bell pepper - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Water - 2 tablespoons
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
  2. In a bowl, mix soy sauce, cornstarch, and water to make a sauce; set aside.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
  5. In the same skillet, add garlic, ginger, and bell pepper; stir-fry for 2-3 minutes until fragrant.
  6. Add the sliced zucchini to the skillet and continue to stir-fry for another 3-4 minutes until tender-crisp.
  7. Return the tofu to the skillet, pour the sauce over the mixture, and stir well to combine.
  8. Cook for an additional 2 minutes, allowing the sauce to thicken slightly.
  9. Season with salt and black pepper to taste.
  10. Garnish with chopped green onions before serving.
