Ingredients

  • All-purpose flour - 150 grams
  • Cornmeal - 50 grams
  • Warm water - 100 ml
  • Active dry yeast - 5 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Zucchini - 1 medium, grated
  • Sweet corn - 150 grams (canned or fresh)
  • Green onions - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Sesame oil - 1 teaspoon
  • Cheese (mozzarella or cheddar) - 100 grams, shredded

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour, cornmeal, and salt. Add the yeast mixture and olive oil, and mix until a dough forms.
  3. Knead the dough on a lightly floured surface for about 5 minutes until smooth. Place in a greased bowl, cover with a cloth, and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, prepare the filling. In a skillet, heat a teaspoon of oil over medium heat, sauté the minced garlic for 1 minute, then add the grated zucchini, sweet corn, and green onions. Cook for 5-7 minutes until the zucchini is soft.
  5. Stir in soy sauce, black pepper, and sesame oil. Remove from heat and let the mixture cool.
  6. Preheat the oven to 220°C (428°F).
  7. Once the dough has risen, roll it out on a floured surface to fit your pizza pan. Transfer the rolled dough to the pan.
  8. Spread the zucchini and corn mixture evenly over the dough, then sprinkle the shredded cheese on top.
  9. Bake in the preheated oven for 15-20 minutes or until the crust is golden and the cheese is bubbly.
  10. Remove from the oven, let it cool for a few minutes, slice, and serve.
