Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Zucchini - 100 grams, grated
  • Sweet corn (canned or frozen) - 100 grams
  • Green onions - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Place the dough in a greased bowl, cover with a cloth, and let it rise for 30 minutes in a warm place.
  4. While the dough rises, prepare the topping. In a skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add grated zucchini, sweet corn, green onions, soy sauce, sesame oil, and black pepper to the skillet. Cook for about 5-7 minutes until the zucchini is tender. Remove from heat and let it cool slightly.
  6. Preheat your oven to 220°C (430°F). Once the dough has risen, punch it down and divide it into two equal portions.
  7. Roll each portion into a flat round shape about 1/2 cm thick. Place the flatbreads on a baking sheet lined with parchment paper.
  8. Spread the zucchini and corn mixture evenly over each flatbread. Bake in the preheated oven for 12-15 minutes until the edges are golden brown.
  9. Remove from the oven and garnish with chopped cilantro before serving.
