Ingredients
- Glutinous rice - 200g
- Dried shiitake mushrooms - 4 pieces
- Dried chestnuts - 50g
- Dried lotus seeds - 50g
- Bamboo leaves - 10 pieces (soaked in warm water)
- Soy sauce (gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500ml
Steps
- Soak the glutinous rice, dried shiitake mushrooms, dried chestnuts, and dried lotus seeds in separate bowls of water for at least 4 hours or overnight.
- After soaking, drain the rice and ingredients. Chop the shiitake mushrooms, chestnuts, and lotus seeds into small pieces.
- In a bowl, mix the drained rice with soy sauce, sesame oil, salt, and black pepper until well combined.
- Prepare the bamboo leaves by rinsing them and laying them flat. Take two leaves and overlap them to form a cone.
- Fill the cone with a layer of glutinous rice, followed by a layer of the mixed filling (shiitake mushrooms, chestnuts, and lotus seeds), then cover with another layer of rice.
- Fold the bamboo leaves over to enclose the filling, securing it tightly. Tie with kitchen twine or strips of bamboo leaf to hold it together.
- Repeat the process for the remaining ingredients to make a total of 4 dumplings.
- In a large pot, place the wrapped dumplings and cover them with water. Bring to a boil, then reduce to a simmer, covering the pot and cooking for about 2 to 2.5 hours.
- Once cooked, remove the dumplings from the pot and let them cool slightly before unwrapping.
- Serve warm or at room temperature.
