Ingredients
- All-purpose flour - 200 grams
- Warm water - 100 ml
- Active dry yeast - 5 grams
- Sugar - 10 grams
- Salt - 2 grams
- Black sesame paste - 100 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Coriander (cilantro) - 10 grams, chopped
- Soy sauce - 10 ml
- Sesame oil - 5 ml
- Vegetable oil - for frying
Steps
- In a small bowl, mix warm water, active dry yeast, and sugar. Let it sit for 5-10 minutes until frothy.
- In a mixing bowl, combine all-purpose flour and salt. Gradually add the yeast mixture and knead until a smooth dough forms. Let it rise in a warm place for about 30 minutes, or until doubled in size.
- Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a ball and flatten slightly.
- Spread about 25 grams of black sesame paste in the center of each flattened dough. Fold the edges over the filling and pinch to seal tightly.
- Heat vegetable oil in a skillet over medium heat. Place the filled buns seam side down and cook for 2-3 minutes until golden brown. Flip and cook the other side for another 2-3 minutes.
- In the meantime, prepare the vegetable filling by mixing the julienned cucumber, carrot, chopped coriander, soy sauce, and sesame oil in a bowl.
- Once the buns are cooked, assemble the Zhi Ma Bao by placing a generous amount of the vegetable filling inside each bun.
