Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Active dry yeast - 5 grams
  • Sugar - 10 grams
  • Salt - 2 grams
  • Black sesame paste - 100 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Coriander (cilantro) - 10 grams, chopped
  • Soy sauce - 10 ml
  • Sesame oil - 5 ml
  • Vegetable oil - for frying

Steps

  1. In a small bowl, mix warm water, active dry yeast, and sugar. Let it sit for 5-10 minutes until frothy.
  2. In a mixing bowl, combine all-purpose flour and salt. Gradually add the yeast mixture and knead until a smooth dough forms. Let it rise in a warm place for about 30 minutes, or until doubled in size.
  3. Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a ball and flatten slightly.
  4. Spread about 25 grams of black sesame paste in the center of each flattened dough. Fold the edges over the filling and pinch to seal tightly.
  5. Heat vegetable oil in a skillet over medium heat. Place the filled buns seam side down and cook for 2-3 minutes until golden brown. Flip and cook the other side for another 2-3 minutes.
  6. In the meantime, prepare the vegetable filling by mixing the julienned cucumber, carrot, chopped coriander, soy sauce, and sesame oil in a bowl.
  7. Once the buns are cooked, assemble the Zhi Ma Bao by placing a generous amount of the vegetable filling inside each bun.
  8. Serve warm and enjoy your dairy-free Chinese burgers!
