- Sesame oil - 2 tablespoons
- Vegetable oil - for frying
Steps
- In a mixing bowl, combine the gluten-free all-purpose flour and salt.
- Gradually add the warm water to the flour, mixing with a fork until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth, then cover with a damp cloth and let it rest for 10 minutes.
- Divide the dough into two equal portions and roll each portion into a thin circle, about 20 cm in diameter.
- Brush each circle with sesame oil, then sprinkle the chopped scallions evenly over the surface.
- Roll the dough tightly into a log, then coil the log into a spiral. Flatten gently with your palm, then roll out again into a circle about 1 cm thick.
- Heat a non-stick frying pan over medium heat and add vegetable oil to coat the bottom.
- Place the pancake in the pan and fry for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove from the pan and drain on paper towels before slicing into wedges. Serve warm.
