  • Salt - 1/2 tsp
  • Warm water - 120ml
  • Olive oil - 1 tbsp
  • Carrot, grated - 50g
  • Mushrooms, finely chopped - 50g
  • Spinach, chopped - 30g
  • Tofu, crumbled - 100g
  • Soy sauce - 1 tbsp
  • Sesame oil - 1 tsp
  • Spring onion, chopped - 1 stalk

Steps

  1. In a mixing bowl, combine gluten-free all-purpose flour, baking powder, and salt.
  2. Add warm water and olive oil to the dry ingredients, and mix until a dough forms.
  3. Knead the dough for about 5 minutes until smooth, then cover it with a damp cloth and let it rest for 15 minutes.
  4. In a skillet, heat a little oil over medium heat, then add grated carrot, chopped mushrooms, and spinach. Sauté for 5 minutes until softened.
  5. Add crumbled tofu, soy sauce, sesame oil, and spring onion to the skillet, and stir well. Cook for 3-4 minutes until heated through, then remove from heat.
  6. Divide the rested dough into 4 equal pieces and roll each piece into a circle about 10 cm in diameter.
  7. Place a spoonful of the vegetable-tofu filling in the center of each dough circle, then carefully fold the edges over to seal the bun.
  8. Place the buns in a steamer lined with parchment paper and steam for 15-20 minutes until cooked through.
  9. Serve warm with a side of soy sauce for dipping.
