- All-purpose flour - 200 grams
- Warm water - 100 ml
- Cabbage - 100 grams, finely chopped
- Carrot - 50 grams, grated
- Mushrooms - 50 grams, finely chopped
- Green onion - 2 stalks, finely chopped
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
Steps
- In a mixing bowl, combine the all-purpose flour and warm water. Knead the mixture until a smooth dough forms. Cover with a damp cloth and let it rest for 20 minutes.
- In another bowl, mix the finely chopped cabbage, grated carrot, chopped mushrooms, green onion, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper until well combined.
- Divide the rested dough into small balls (about 20 grams each). Roll each ball into a thin circle on a floured surface.
- Place a spoonful of the vegetable filling in the center of each circle. Fold the dough over the filling and pinch the edges to seal tightly.
- Prepare a steamer and bring water to a boil. Place the dumplings in the steamer, making sure they are not touching each other. Steam for about 15-20 minutes until the dough is translucent and the filling is cooked through.
- Serve the Zhengjiao warm, with extra soy sauce or chili oil for dipping.
