Ingredients

  • Carrot - 1 medium, julienned
  • Mushrooms - 100g, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Coconut aminos - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2, chopped (for garnish)

Steps

  1. Spiralize the zucchini using a spiralizer to create noodles. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and grated ginger, sauté for about 1 minute until fragrant.
  3. Add the sliced chicken breast to the skillet, season with salt and black pepper, and cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the bell pepper, carrot, and mushrooms, cooking for another 5 minutes until the vegetables are tender.
  5. Pour in the coconut aminos and sesame oil, stirring to combine all ingredients. Cook for an additional 2 minutes.
  6. Gently fold in the zucchini noodles and cook for another 2-3 minutes until just heated through but still crunchy.
  7. Serve immediately, garnishing with chopped green onions.
