- Brown sugar - 50 grams
- Coconut milk - 100 ml
- Red bean paste - 100 grams
- Chopped walnuts - 30 grams
- Dried apricots - 50 grams
- Sesame seeds - 10 grams
- Salt - a pinch
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked rice and place it in a steamer lined with cheesecloth or a clean kitchen towel.
- Steam the rice over boiling water for about 30 minutes, or until it becomes translucent and sticky.
- While the rice is steaming, combine the coconut milk, brown sugar, and a pinch of salt in a small saucepan over low heat, stirring until the sugar dissolves.
- Once the rice is cooked, transfer it to a mixing bowl and pour the coconut milk mixture over it, stirring well to combine.
- In a separate bowl, mix the red bean paste with chopped walnuts and diced dried apricots.
- In a serving dish, layer half of the sweet rice, followed by the red bean paste mixture, and top with the remaining sweet rice.
- Sprinkle sesame seeds on top for garnish and serve warm.
