  • Brown sugar - 1 teaspoon
  • Red chili flakes - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Spring onions - 2, chopped (for garnish)
  • Lemon wedges - 2 (for serving)

Steps

  1. Clean the squid thoroughly, removing the ink sac, head, and internal organs. Pat dry with paper towels.
  2. In a bowl, combine the soy sauce, Shaoxing wine, sesame oil, minced garlic, grated ginger, brown sugar, red chili flakes, and black pepper to create the marinade.
