Ingredients
- Chinese eggplant - 2 medium (about 400g)
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Chili flakes - 1 teaspoon (adjust to taste)
- Honey - 1 tablespoon
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon, toasted
- Fresh coriander - 2 tablespoons, chopped
Steps
- Preheat your grill or grill pan over medium heat.
- Wash the eggplants and cut them in half lengthwise. Score the flesh in a diamond pattern to help absorb the marinade.
- In a small bowl, mix together soy sauce, sesame oil, minced garlic, grated ginger, chili flakes, and honey to create the marinade.
- Brush the marinade generously over the cut sides of the eggplants, allowing it to soak in for about 10 minutes.
- Place the eggplants on the grill, cut side down, and grill for about 6-8 minutes until the flesh is tender and charred.
- Flip the eggplants and grill for an additional 4-5 minutes, brushing with more marinade if desired.
- Once cooked, remove from the grill and sprinkle with chopped green onions, toasted sesame seeds, and fresh coriander before serving.
