  • Chinese eggplant - 2 medium (about 400g)

  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Chili flakes - 1 teaspoon (adjust to taste)
  • Honey - 1 tablespoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon, toasted
  • Fresh coriander - 2 tablespoons, chopped

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. Wash the eggplants and cut them in half lengthwise. Score the flesh in a diamond pattern to help absorb the marinade.
  3. In a small bowl, mix together soy sauce, sesame oil, minced garlic, grated ginger, chili flakes, and honey to create the marinade.
