- Whole tilapia (or any white fish) - 400 grams
- Soy sauce - 3 tablespoons
- Chinese black vinegar - 1 tablespoon
- Honey - 1 tablespoon
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Sichuan peppercorns - 1 teaspoon, crushed
- Chili flakes - 1 teaspoon (adjust to taste)
- Spring onions - 2, chopped
- Fresh coriander - a handful, chopped
- Vegetable oil - 2 tablespoons
- Lemon - 1, for garnish
Steps
- Clean the fish thoroughly and make diagonal cuts on both sides of the fish to allow the marinade to penetrate.
- In a mixing bowl, combine soy sauce, black vinegar, honey, minced garlic, grated ginger, crushed Sichuan peppercorns, and chili flakes to create the marinade.
- Pour the marinade over the fish, ensuring it covers both sides and inside the cuts. Allow it to marinate for at least 15 minutes.
- Preheat a barbecue grill or grill pan over medium-high heat and brush it lightly with vegetable oil.
- Place the marinated fish on the grill and cook for about 6-8 minutes on each side, or until the flesh is opaque and flakes easily.
- During grilling, baste the fish with any remaining marinade for extra flavor.
- Once cooked, remove the fish from the grill and let it rest for a couple of minutes.
- Garnish with chopped spring onions and fresh coriander, and serve with lemon wedges on the side.
