Ingredients

  • Whole tilapia (or any white fish) - 400 grams
  • Soy sauce - 3 tablespoons
  • Chinese black vinegar - 1 tablespoon
  • Honey - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Sichuan peppercorns - 1 teaspoon, crushed
  • Chili flakes - 1 teaspoon (adjust to taste)
  • Spring onions - 2, chopped
  • Fresh coriander - a handful, chopped
  • Vegetable oil - 2 tablespoons
  • Lemon - 1, for garnish

Steps

  1. Clean the fish thoroughly and make diagonal cuts on both sides of the fish to allow the marinade to penetrate.
  2. In a mixing bowl, combine soy sauce, black vinegar, honey, minced garlic, grated ginger, crushed Sichuan peppercorns, and chili flakes to create the marinade.
  3. Pour the marinade over the fish, ensuring it covers both sides and inside the cuts. Allow it to marinate for at least 15 minutes.
  4. Preheat a barbecue grill or grill pan over medium-high heat and brush it lightly with vegetable oil.
  5. Place the marinated fish on the grill and cook for about 6-8 minutes on each side, or until the flesh is opaque and flakes easily.
  6. During grilling, baste the fish with any remaining marinade for extra flavor.
  7. Once cooked, remove the fish from the grill and let it rest for a couple of minutes.
  8. Garnish with chopped spring onions and fresh coriander, and serve with lemon wedges on the side.
