- Wild rice - 100 grams
- Water - 500 ml
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Green onions - 2, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Fresh cilantro - a handful, chopped
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the wild rice under cold water until the water runs clear.
- In a medium saucepan, combine the wild rice and 500 ml of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 25 minutes or until the rice is tender and the water is absorbed.
- While the rice is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
- Add diced carrot and red bell pepper to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
- Once the wild rice is cooked, add it to the skillet with the sautéed vegetables. Pour in coconut aminos and sesame oil, and mix well to combine all the ingredients.
- Season with salt and pepper to taste. Stir in the sliced green onions and chopped cilantro just before serving.
