Ingredients

  • Chicken thighs - 400 grams
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Coconut aminos - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Green onions - 2, chopped (for garnish)
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. In a bowl, combine minced garlic, grated ginger, coconut aminos, sesame oil, chili flakes, coriander powder, cumin powder, black pepper, and salt to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and place it on the grill. Cook for about 6-8 minutes on each side or until the chicken reaches an internal temperature of 75°C (165°F) and has nice char marks.
  5. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
  6. Slice the grilled chicken and serve it garnished with chopped green onions and fresh cilantro.
