- Ginger - 1 teaspoon, minced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Fresh cilantro - a handful, chopped
- Chili oil - to taste
- Salt - to taste
Steps
- Soak the rice noodles in hot water for about 15 minutes until softened, then drain and set aside.
- In a pot, heat the sesame oil over medium heat and sauté the minced garlic and ginger until fragrant, about 1 minute.
- Add the sliced shiitake mushrooms and chopped bok choy to the pot, cooking for another 3-4 minutes until the mushrooms are tender.
- Pour in the chicken broth and bring to a simmer. Add the soy sauce and salt to taste.
- Once the broth is simmering, add the soaked rice noodles and let them heat through for about 2-3 minutes.
