Ingredients

  • Rice noodles - 200 grams
  • Chicken broth - 500 ml
  • Shiitake mushrooms - 50 grams, sliced
  • Baby bok choy - 100 grams, chopped
  • Spring onions - 2, finely sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Fresh cilantro - a handful, chopped
  • Chili oil - to taste
  • Salt - to taste

Steps

  1. Soak the rice noodles in hot water for about 15 minutes until softened, then drain and set aside.
  2. In a pot, heat the sesame oil over medium heat and sauté the minced garlic and ginger until fragrant, about 1 minute.
  3. Add the sliced shiitake mushrooms and chopped bok choy to the pot, cooking for another 3-4 minutes until the mushrooms are tender.
  4. Pour in the chicken broth and bring to a simmer. Add the soy sauce and salt to taste.
  5. Once the broth is simmering, add the soaked rice noodles and let them heat through for about 2-3 minutes.
  6. Serve the noodles in bowls, garnished with spring onions, fresh cilantro, and a drizzle of chili oil.
