- Fresh shiitake mushrooms - 100 grams, sliced
- Garlic - 2 cloves, minced

- Green onions - 2 stalks, chopped
- Vegetable broth - 300 ml
- Soy sauce (gluten-free) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon

Steps
- Soak the dried mushrooms in warm water for 20 minutes until rehydrated, then drain and chop.
- Rinse the jasmine rice under cold water until the water runs clear, then drain.

- Add the rinsed rice to the pot, stirring to combine with the mushrooms and aromatics.
- Pour in the vegetable broth and soy sauce. Season with salt and black pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
