Ingredients

  • Jasmine rice - 150 grams
  • Mixed dried mushrooms (shiitake, porcini, and oyster) - 50 grams
  • Fresh shiitake mushrooms - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2 stalks, chopped
  • Vegetable broth - 300 ml
  • Soy sauce (gluten-free) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the dried mushrooms in warm water for 20 minutes until rehydrated, then drain and chop.
  2. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  3. In a medium pot, heat the olive oil over medium heat. Add minced garlic and ginger, sautéing until fragrant (about 1 minute).
  4. Add the fresh shiitake mushrooms to the pot and cook for 3-4 minutes until they soften.
  5. Stir in the chopped rehydrated mushrooms and cook for an additional 2 minutes.
  6. Add the rinsed rice to the pot, stirring to combine with the mushrooms and aromatics.
  7. Pour in the vegetable broth and soy sauce. Season with salt and black pepper to taste.
  8. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  9. Remove from heat and let it sit, covered, for an additional 5 minutes.
  10. Fluff the rice with a fork, drizzle with sesame oil, and garnish with chopped green onions before serving.
