- Mixed wild mushrooms (shiitake, enoki, and oyster) - 150 grams, sliced
- Garlic - 2 cloves, minced
- Fresh cilantro - 2 tablespoons, chopped
- Chili oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Scallions - 2, finely sliced
- Black pepper - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat your oven to 220°C (428°F).
- In a pan, heat olive oil over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant.
- Add the mixed wild mushrooms to the pan and cook for about 5-7 minutes until they are soft and browned. Stir in soy sauce, sesame oil, chili oil, salt, and black pepper. Cook for another 2 minutes, then remove from heat.
- Roll out the gluten-free pizza dough on a floured surface to your desired thickness and shape.
- Transfer the dough to a baking tray lined with parchment paper. Spread the sautéed mushroom mixture evenly over the crust.
- Sprinkle sliced scallions and chopped cilantro on top of the mushrooms.
- Bake in the preheated oven for 12-15 minutes or until the crust is golden brown.
- Remove from the oven, let cool for a few minutes, and then slice and serve.
