Ingredients

  • Gluten-free pizza dough - 200 grams
  • Mixed wild mushrooms (shiitake, enoki, and oyster) - 150 grams, sliced
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Chili oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Scallions - 2, finely sliced
  • Black pepper - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a pan, heat olive oil over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant.
  3. Add the mixed wild mushrooms to the pan and cook for about 5-7 minutes until they are soft and browned. Stir in soy sauce, sesame oil, chili oil, salt, and black pepper. Cook for another 2 minutes, then remove from heat.
  4. Roll out the gluten-free pizza dough on a floured surface to your desired thickness and shape.
  5. Transfer the dough to a baking tray lined with parchment paper. Spread the sautéed mushroom mixture evenly over the crust.
  6. Sprinkle sliced scallions and chopped cilantro on top of the mushrooms.
  7. Bake in the preheated oven for 12-15 minutes or until the crust is golden brown.
  8. Remove from the oven, let cool for a few minutes, and then slice and serve.
