Ingredients

  • Brown rice flour - 150g
  • Tapioca flour - 50g
  • Water - 200ml
  • Salt - 1/2 tsp
  • Olive oil - 1 tbsp
  • Mixed mushrooms (shiitake, oyster, enoki) - 200g, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 tsp, grated
  • Spring onions - 2, chopped
  • Fresh cilantro - 2 tbsp, chopped
  • Soy sauce (gluten-free) - 1 tbsp
  • Sesame oil - 1 tsp
  • Chili flakes - 1/2 tsp (optional)

Steps

  1. In a mixing bowl, combine the brown rice flour, tapioca flour, salt, and water. Mix until a smooth batter forms.
  2. Heat a non-stick skillet over medium heat and add 1/2 tablespoon of olive oil.
  3. Pour half of the batter into the skillet, spreading it evenly to form a flatbread. Cook for about 3-4 minutes until the edges start to lift and the bottom is golden brown.
  4. Carefully flip the flatbread using a spatula and cook for another 3-4 minutes. Once cooked, remove it from the skillet and repeat with the remaining batter to make a second flatbread.
  5. In the same skillet, add the remaining olive oil, minced garlic, and grated ginger. Sauté for 1 minute until fragrant.
  6. Add the sliced mushrooms and cook for 5-7 minutes until tender. Stir in spring onions, soy sauce, sesame oil, and chili flakes if using. Cook for another 2 minutes.
  7. Spread the mushroom mixture evenly over the cooked flatbreads and garnish with fresh cilantro before serving.
