Ingredients
- Shiitake mushrooms - 150 grams, finely chopped
- King oyster mushrooms - 150 grams, finely chopped
- Firm tofu - 100 grams, crumbled
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Chinese five-spice powder - 1 teaspoon
- Cornstarch - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Buns (whole grain or regular) - 2
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Cucumber - 1/2 medium, sliced
- Sriracha or chili sauce - to taste
Steps
- In a large skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant (about 1 minute).
- Add the finely chopped shiitake and king oyster mushrooms to the skillet. Cook for about 5-7 minutes until the mushrooms are soft and most of the moisture has evaporated.
- In a mixing bowl, combine the cooked mushrooms, crumbled tofu, soy sauce, Chinese five-spice powder, cornstarch, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
- Shape the mixture into two equal-sized patties.
- Wipe the skillet clean and heat it again over medium heat. Cook the patties for about 5-6 minutes on each side or until they are golden brown and crispy.
- While the patties are cooking, lightly toast the buns in a separate pan until golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the mushroom patty, slices of tomato and cucumber, and a drizzle of sriracha or chili sauce. Top with the other half of the bun.
