Ingredients

  • Bamboo shoots - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Coconut aminos - 2 tablespoons
  • Chicken broth - 500 ml
  • Sesame oil - 1 tablespoon
  • Cilantro - a handful, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot, bring the chicken broth to a simmer over medium heat.
  2. Add the minced garlic and grated ginger to the broth, and let it infuse for about 3 minutes.
  3. Add the sliced chicken breast to the simmering broth and cook for 5-7 minutes until the chicken is cooked through.
  4. Stir in the sliced mushrooms, bamboo shoots, and julienned carrot. Cook for another 5 minutes until the vegetables are tender.
  5. Season the broth with coconut aminos, salt, and pepper to taste.
  6. In a separate skillet, heat sesame oil over medium heat and sauté the spiralized zucchini noodles for about 2-3 minutes until just tender.
  7. Divide the zucchini noodles into two bowls and ladle the hot broth and chicken mixture over them.
  8. Drizzle the beaten duck eggs over the hot broth, allowing them to cook slightly in the heat.
  9. Garnish with chopped green onions and cilantro before serving.
