Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Chicken breast - 100 grams, diced
  • Shrimp - 100 grams, peeled and deveined
  • Egg - 1 large
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Spring onions - 2, chopped
  • Soy sauce (gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - 1/2 teaspoon (optional)
  • Coriander leaves - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Combine the rice and 300 ml of water in a pot, bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
  2. In a frying pan, heat the sesame oil over medium heat. Add minced garlic and ginger, and sauté for 1-2 minutes until fragrant.
  3. Add the diced chicken breast to the pan and cook for about 5 minutes until browned and cooked through. Season with salt and black pepper.
  4. Add the shrimp to the pan and cook for an additional 3-4 minutes until they turn pink and are cooked through. Stir in the soy sauce and chili flakes (if using), then remove from heat.
  5. In a separate small pan, lightly scramble the egg over low heat until just set, then remove from the heat.
  6. Once the rice is cooked, fluff it with a fork and divide it into two bowls. Top each bowl with the chicken and shrimp mixture, scrambled egg, and chopped spring onions.
  7. Garnish with fresh coriander leaves before serving.
