- Jasmine rice - 150 grams
- Water - 300 ml
- Chicken breast - 100 grams, diced
- Shrimp - 100 grams, peeled and deveined
- Egg - 1 large
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Spring onions - 2, chopped
- Soy sauce (gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Chili flakes - 1/2 teaspoon (optional)
- Coriander leaves - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear. Combine the rice and 300 ml of water in a pot, bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- In a frying pan, heat the sesame oil over medium heat. Add minced garlic and ginger, and sauté for 1-2 minutes until fragrant.
- Add the diced chicken breast to the pan and cook for about 5 minutes until browned and cooked through. Season with salt and black pepper.
- Add the shrimp to the pan and cook for an additional 3-4 minutes until they turn pink and are cooked through. Stir in the soy sauce and chili flakes (if using), then remove from heat.
- In a separate small pan, lightly scramble the egg over low heat until just set, then remove from the heat.
- Once the rice is cooked, fluff it with a fork and divide it into two bowls. Top each bowl with the chicken and shrimp mixture, scrambled egg, and chopped spring onions.
- Garnish with fresh coriander leaves before serving.
