Youtiao, also known as Chinese crullers, is a deliciously crispy and airy fried dough that pairs perfectly with soy milk or congee for breakfast. This vegan version maintains the traditional flavors while being completely plant-based, making it a delightful start to your day.

Ingredients
- All-purpose flour - 250 grams
- Baking powder - 5 grams
- Baking soda - 2 grams
- Salt - 5 grams
- Water - 150 milliliters
- Vegetable oil - for frying
Steps
- In a mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt.
- Gradually add water to the dry ingredients, stirring until a soft dough forms.
- Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
- Cover the dough with a damp cloth and let it rest for 30 minutes at room temperature.
- After resting, divide the dough into two equal pieces and shape each piece into a long, thin rectangle about 1 cm thick.
- Stack the two rectangles on top of each other and press gently to adhere.
- Cut the stacked dough into strips about 3 cm wide, then gently stretch each strip to about 30 cm in length.
- Heat vegetable oil in a deep pan or wok over medium-high heat until hot (around 180°C).
- Carefully add the stretched dough strips to the hot oil, frying in batches to avoid overcrowding, until they puff up and turn golden brown, around 2-3 minutes per side.
- Remove the youtiao from the oil and drain on a paper towel before serving.
