You Tiao
You Tiao, or Chinese crullers, are deliciously crispy and airy breakfast treats often enjoyed with congee or soy milk. This Paleo version replaces traditional flour with almond flour, resulting in a gluten-free and low-carb delight.

Ingredients
- Almond flour - 200 grams
- Tapioca starch - 50 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Eggs - 2 large
- Coconut milk - 60 ml
- Water - 60 ml
- Coconut oil - for frying
Steps
- In a mixing bowl, combine almond flour, tapioca starch, baking powder, and salt. Mix well.
- In a separate bowl, whisk together eggs, coconut milk, and water until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until a sticky dough forms.
- Cover the dough with a damp cloth and let it rest for 15 minutes.
- On a lightly greased surface, divide the dough into two equal portions and shape each portion into a long strip, about 1 cm thick and 3 cm wide.
- Heat coconut oil in a deep frying pan over medium heat until hot.
- Carefully add the dough strips to the hot oil, frying them until golden brown and puffed up, about 2-3 minutes per side.
- Once cooked, remove the You Tiao from the oil and drain on paper towels.
- Serve warm with your choice of dipping sauce or alongside congee.
