Ingredients

  • Cooked jasmine rice - 200 grams
  • Eggs - 2 large
  • Green peas - 50 grams
  • Carrot - 1 small, diced (about 50 grams)
  • Spring onions - 2, chopped
  • Cooked chicken breast - 100 grams, diced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large pan or wok over medium heat.
  2. Add the diced carrots and green peas, and stir-fry for about 2-3 minutes until they are tender.
  3. Push the vegetables to one side of the pan and crack the eggs on the other side. Scramble the eggs until fully cooked.
  4. Add the cooked chicken breast and jasmine rice to the pan, mixing everything together.
  5. Pour in the soy sauce and sesame oil, and stir-fry for another 3-4 minutes until heated through.
  6. Add the chopped spring onions, and season with salt and black pepper to taste.
  7. Serve hot, garnished with additional spring onions if desired.
