- Cooked jasmine rice - 200 grams
- Eggs - 2 large
- Green peas - 50 grams
- Carrot - 1 small, diced (about 50 grams)
- Spring onions - 2, chopped
- Cooked chicken breast - 100 grams, diced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a large pan or wok over medium heat.
- Add the diced carrots and green peas, and stir-fry for about 2-3 minutes until they are tender.
- Push the vegetables to one side of the pan and crack the eggs on the other side. Scramble the eggs until fully cooked.
- Add the cooked chicken breast and jasmine rice to the pan, mixing everything together.
- Pour in the soy sauce and sesame oil, and stir-fry for another 3-4 minutes until heated through.
- Add the chopped spring onions, and season with salt and black pepper to taste.
- Serve hot, garnished with additional spring onions if desired.
