Ingredients

  • Basmati rice - 150 grams
  • Lamb or beef - 200 grams, diced
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Water - 300 milliliters
  • Fresh cilantro - a handful, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat the vegetable oil over medium heat and add the chopped onions. Sauté until they are translucent, about 5 minutes.
  3. Add the diced lamb or beef to the pot and brown it on all sides, about 8-10 minutes.
  4. Stir in the minced garlic, diced carrot, ground cumin, ground coriander, salt, and black pepper. Cook for another 3-4 minutes until the spices are fragrant.
  5. Drain the soaked rice and add it to the pot, stirring gently to combine with the meat and vegetables.
  6. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 minutes until the rice is tender and has absorbed the water.
  7. Remove the pot from heat and let it sit, covered, for an additional 5-10 minutes. Fluff the rice with a fork before serving.
  8. Garnish with chopped fresh cilantro and serve warm.
