- Basmati rice - 150 grams
- Lamb or beef - 200 grams, diced
- Onion - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Water - 300 milliliters
- Fresh cilantro - a handful, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat and add the chopped onions. Sauté until they are translucent, about 5 minutes.
- Add the diced lamb or beef to the pot and brown it on all sides, about 8-10 minutes.
- Stir in the minced garlic, diced carrot, ground cumin, ground coriander, salt, and black pepper. Cook for another 3-4 minutes until the spices are fragrant.
- Drain the soaked rice and add it to the pot, stirring gently to combine with the meat and vegetables.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 minutes until the rice is tender and has absorbed the water.
- Remove the pot from heat and let it sit, covered, for an additional 5-10 minutes. Fluff the rice with a fork before serving.
- Garnish with chopped fresh cilantro and serve warm.
