- Lamb shoulder - 400 grams, cut into 2.5 cm cubes
- Cumin seeds - 1 tablespoon, toasted and crushed
- Coriander seeds - 1 tablespoon, toasted and crushed
- Paprika - 1 teaspoon
- Chili powder - 1 teaspoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Wooden skewers - 4, soaked in water for 30 minutes
Steps
- In a large bowl, combine the crushed cumin and coriander seeds, paprika, chili powder, minced garlic, ginger, salt, black pepper, olive oil, and lemon juice to create a marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated lamb cubes onto the soaked wooden skewers, leaving a little space between each piece.
- Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally until the lamb is cooked to your desired doneness and has nice grill marks.
- Remove from the grill and let rest for a few minutes before serving.
