Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Cumin seeds - 1 tablespoon, toasted and crushed
  • Coriander seeds - 1 tablespoon, toasted and crushed
  • Paprika - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Wooden skewers - 4, soaked in water for 30 minutes

Steps

  1. In a large bowl, combine the crushed cumin and coriander seeds, paprika, chili powder, minced garlic, ginger, salt, black pepper, olive oil, and lemon juice to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated lamb cubes onto the soaked wooden skewers, leaving a little space between each piece.
  5. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally until the lamb is cooked to your desired doneness and has nice grill marks.
  6. Remove from the grill and let rest for a few minutes before serving.
