Ingredients

  • lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • olive oil - 2 tablespoons
  • ground cumin - 1 tablespoon
  • ground coriander - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • garlic powder - 1 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fresh cilantro - 2 tablespoons, chopped
  • lemon juice - 1 tablespoon
  • skewers - 4-6 (soaked in water for 30 minutes if wooden)

Steps

  1. In a large bowl, combine the olive oil, ground cumin, ground coriander, smoked paprika, garlic powder, salt, black pepper, chopped cilantro, and lemon juice to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to allow the flavors to meld.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the lamb is browned and cooked through to your desired doneness.
  6. Remove the skewers from the grill and let them rest for a couple of minutes before serving.
