Ingredients

  • Gluten-free rice noodles - 150g
  • Chicken breast, thinly sliced - 100g
  • Bell pepper, sliced - 1 (about 120g)
  • Carrot, julienned - 1 medium (about 70g)
  • Snow peas - 100g
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 tsp
  • Soy sauce (gluten-free) - 2 tbsp
  • Oyster sauce (gluten-free) - 1 tbsp
  • Sesame oil - 1 tsp
  • Vegetable oil - 2 tbsp
  • Green onions, chopped - 2 (for garnish)
  • Sesame seeds - 1 tsp (for garnish)

Steps

  1. Cook the gluten-free rice noodles according to package instructions, drain, and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium-high heat.
  3. Add the minced garlic and grated ginger to the pan, stir-frying for about 30 seconds until fragrant.
  4. Add the sliced chicken breast to the pan and cook until browned and cooked through, about 4-5 minutes.
  5. Add the sliced bell pepper, julienned carrot, and snow peas to the pan, stir-frying for another 3-4 minutes until the vegetables are tender-crisp.
  6. Pour in the soy sauce and oyster sauce, stirring to combine all the ingredients.
  7. Add the cooked rice noodles to the pan, tossing everything together until the noodles are heated through and well coated in the sauce, about 2 minutes.
  8. Drizzle sesame oil over the noodles and toss again.
  9. Serve hot, garnished with chopped green onions and sesame seeds.
