- Raw peanuts - 100 grams
- Jasmine rice - 50 grams
- Water - 800 ml
- Rock sugar - 30 grams
- Salt - 1/4 teaspoon
- Coconut milk - 100 ml (optional)
- Chopped scallions - 2 tablespoons (for garnish)
Steps
- Rinse the raw peanuts under cold water, then soak them in water for at least 4 hours or overnight.
- After soaking, drain the peanuts and place them in a pot with 800 ml of fresh water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low and simmer for about 30 minutes until the peanuts are soft.
- In a separate pot, rinse the jasmine rice and add it to the soft peanuts. Cook for an additional 10 minutes, stirring occasionally.
- Add the rock sugar and salt to the pot, stirring until the sugar dissolves. If using, pour in the coconut milk and stir well to combine.
- Simmer for another 5 minutes until everything is heated through and well mixed.
- Remove from heat, let cool slightly, and serve hot, garnished with chopped scallions.
