Ingredients
- All-purpose flour - 200 grams
- Water - 120 milliliters
- Salt - 1 teaspoon
- Ground lamb - 150 grams
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Spring onions - 2, finely chopped
- Red bell pepper - 1, diced
- Soy sauce - 1 tablespoon
- Cumin powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Mozzarella cheese - 100 grams, shredded
- Fresh coriander - a handful, chopped
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing to form a soft dough. Knead for about 5 minutes until smooth, then cover and let it rest for 15 minutes.
- In a skillet over medium heat, add 1 tablespoon of olive oil. Add minced garlic, ginger, and ground lamb, cooking until the lamb is browned and cooked through, about 5-7 minutes.
- Stir in the diced red bell pepper, soy sauce, cumin, black pepper, and half of the chopped spring onions. Cook for an additional 2-3 minutes until the peppers soften. Remove from heat.
- Divide the rested dough into two equal balls. Roll each ball into a flat circle, about 20 cm in diameter, on a floured surface.
- In the same skillet, add another tablespoon of olive oil over medium-high heat. Place one flatbread in the skillet and cook for 2-3 minutes until golden brown, then flip it over.
- Spread half of the lamb mixture on top of the cooked flatbread, then sprinkle with half of the mozzarella cheese. Cook for another 2-3 minutes until the cheese melts.
- Transfer the flatbread pizza to a plate and repeat the process with the second ball of dough and remaining ingredients.
- Garnish each pizza with the remaining spring onions and chopped coriander before serving.
