Ingredients

  • scallops - 300 grams
  • olive oil - 2 tablespoons
  • garlic - 2 cloves, minced
  • ginger - 1 teaspoon, minced
  • red bell pepper - 50 grams, sliced
  • zucchini - 100 grams, julienned
  • soy sauce (low sodium) - 1 tablespoon
  • sesame oil - 1 teaspoon
  • green onions - 2 stalks, chopped
  • salt - to taste
  • black pepper - to taste
  • sesame seeds - 1 teaspoon

Steps

  1. Pat the scallops dry with a paper towel and season with salt and black pepper.
  2. Heat the olive oil in a wok over medium-high heat until shimmering.
  3. Add the scallops to the wok in a single layer, and sear for about 2-3 minutes on each side until golden brown and cooked through. Remove the scallops from the wok and set aside.
  4. In the same wok, add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
  5. Add the sliced red bell pepper and julienned zucchini, and stir-fry for 2-3 minutes until slightly tender but still crisp.
  6. Return the scallops to the wok, pour in the soy sauce and sesame oil, and toss everything together for another minute.
  7. Garnish with chopped green onions and sesame seeds before serving.
