- scallops - 300 grams
- olive oil - 2 tablespoons
- garlic - 2 cloves, minced
- ginger - 1 teaspoon, minced
- red bell pepper - 50 grams, sliced
- zucchini - 100 grams, julienned
- soy sauce (low sodium) - 1 tablespoon
- sesame oil - 1 teaspoon
- green onions - 2 stalks, chopped
- salt - to taste
- black pepper - to taste
- sesame seeds - 1 teaspoon
Steps
- Pat the scallops dry with a paper towel and season with salt and black pepper.
- Heat the olive oil in a wok over medium-high heat until shimmering.
- Add the scallops to the wok in a single layer, and sear for about 2-3 minutes on each side until golden brown and cooked through. Remove the scallops from the wok and set aside.
- In the same wok, add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
- Add the sliced red bell pepper and julienned zucchini, and stir-fry for 2-3 minutes until slightly tender but still crisp.
- Return the scallops to the wok, pour in the soy sauce and sesame oil, and toss everything together for another minute.
- Garnish with chopped green onions and sesame seeds before serving.
