Ingredients

  • Lobster tails - 2 (about 300g each)
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Red bell pepper - 1, sliced
  • Green bell pepper - 1, sliced
  • Snow peas - 100g
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Water - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Spring onions - 2, chopped for garnish

Steps

  1. Begin by preparing the lobster tails. Using kitchen scissors, cut the top shell of the lobster tails down the center and gently remove the meat, keeping it in one piece. Cut the lobster meat into bite-sized chunks.
  2. In a small bowl, mix the soy sauce, oyster sauce, cornstarch, and water to create a sauce. Set aside.
  3. Heat the vegetable oil in a wok over medium-high heat. Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
  4. Add the lobster meat to the wok and stir-fry for 2-3 minutes until the lobster is just cooked through. Remove the lobster from the wok and set aside.
  5. In the same wok, add the sliced red and green bell peppers and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
  6. Return the lobster to the wok and pour the prepared sauce over the mixture. Stir well to combine and cook for an additional 2 minutes until everything is well coated and heated through.
  7. Drizzle with sesame oil, give it a final stir, and remove from heat.
  8. Serve immediately, garnished with chopped spring onions.
