Ingredients

  • Crab meat - 250 grams
  • Eggs - 4 large
  • Spring onions - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - for garnish

Steps

  1. Heat 1 tablespoon of vegetable oil in a wok over medium heat.
  2. Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
  3. Increase the heat to high, and add the crab meat, cooking for 2-3 minutes until heated through.
  4. Push the crab meat to one side of the wok and add the remaining tablespoon of vegetable oil.
  5. Crack the eggs into the wok, scrambling them gently with a spatula until just set, about 2 minutes.
  6. Combine the crab meat with the scrambled eggs, then add the soy sauce, sesame oil, spring onions, salt, and black pepper.
  7. Stir-fry everything together for another 1-2 minutes until well mixed and heated through.
  8. Remove from heat and garnish with fresh coriander before serving.
