Ingredients

  • Fresh clams - 500 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Red bell pepper - 1, thinly sliced
  • Snap peas - 100 grams, trimmed
  • Soy sauce - 2 tablespoons
  • Shaoxing wine - 1 tablespoon
  • Spring onions - 2, chopped
  • Sesame oil - 1 teaspoon
  • Coriander leaves - for garnish

Steps

  1. Rinse the clams under cold water to remove any sand and grit. Soak them in fresh water for 30 minutes to help clean them further.
  2. Heat the vegetable oil in a wok over medium-high heat until shimmering.
  3. Add the minced garlic and ginger to the wok, stir-frying for about 30 seconds until fragrant.
  4. Add the sliced red bell pepper and snap peas, stir-frying for 2-3 minutes until they are tender-crisp.
  5. Add the cleaned clams to the wok along with soy sauce and Shaoxing wine. Stir well to combine.
  6. Cover the wok with a lid and cook for about 5-7 minutes, or until the clams have opened up.
  7. Remove the lid, discard any clams that did not open, and stir in chopped spring onions and sesame oil.
  8. Cook for another minute to combine flavors, then remove from heat.
  9. Garnish with coriander leaves before serving.
