- Snap peas - 100 grams, trimmed
- Soy sauce - 2 tablespoons
- Shaoxing wine - 1 tablespoon
- Spring onions - 2, chopped
- Sesame oil - 1 teaspoon
- Coriander leaves - for garnish
Steps
- Rinse the clams under cold water to remove any sand and grit. Soak them in fresh water for 30 minutes to help clean them further.
- Heat the vegetable oil in a wok over medium-high heat until shimmering.
- Add the minced garlic and ginger to the wok, stir-frying for about 30 seconds until fragrant.
- Add the sliced red bell pepper and snap peas, stir-frying for 2-3 minutes until they are tender-crisp.
- Add the cleaned clams to the wok along with soy sauce and Shaoxing wine. Stir well to combine.
- Cover the wok with a lid and cook for about 5-7 minutes, or until the clams have opened up.
- Remove the lid, discard any clams that did not open, and stir in chopped spring onions and sesame oil.
- Cook for another minute to combine flavors, then remove from heat.
- Garnish with coriander leaves before serving.
