- Quinoa - 150 grams
- Water - 400 ml
- Bell pepper (red) - 1 medium, diced
- Carrot - 1 medium, julienned
- Cucumber - 1 small, diced
- Green onion - 2, chopped
- Snow peas - 100 grams, trimmed
- Sesame oil - 2 tablespoons
- Soy sauce (gluten-free) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Fresh ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Cilantro - a handful, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the quinoa under cold water to remove any bitterness, then combine it with 400 ml of water in a medium saucepan.
- Bring the water to a boil over high heat, then reduce the heat to low, cover, and let simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
- While the quinoa cooks, prepare the vegetables: dice the bell pepper, julienne the carrot, and dice the cucumber. Trim the snow peas and chop the green onions.
- In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add the garlic and ginger, sautéing for about 1 minute until fragrant.
- Add the bell pepper, carrot, and snow peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, rice vinegar, remaining tablespoon of sesame oil, salt, and black pepper.
- Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Pour the dressing over the mixture and toss everything to combine.
- Remove from heat, add the chopped cucumber and green onions, and toss gently.
- Serve warm, garnished with fresh cilantro.
