Ingredients

  • Potatoes - 300 grams
  • Green onions - 2 stalks
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. Begin by washing the potatoes thoroughly, then cut them into bite-sized pieces.
  2. Place the potatoes in a pot of salted water and bring to a boil. Cook for about 15-20 minutes or until they are tender when pierced with a fork.
  3. While the potatoes are cooking, prepare the dressing by mixing sesame oil, soy sauce, rice vinegar, minced garlic, salt, black pepper, and chili flakes in a small bowl.
  4. Once the potatoes are cooked, drain them and return them to the pot on low heat. Pour the dressing over the warm potatoes and gently toss to combine.
  5. Add chopped green onions and cilantro to the potato mixture. Toss again to ensure even distribution of the herbs.
  6. Serve the warm potato salad immediately, garnished with extra cilantro if desired.
