Ingredients

  • chicken breast - 250 grams
  • fresh spinach - 150 grams
  • bell pepper (sliced) - 1 medium
  • carrot (julienned) - 1 medium
  • green onions (sliced) - 2 stalks
  • sesame oil - 1 tablespoon
  • soy sauce - 2 tablespoons
  • rice vinegar - 1 tablespoon
  • honey - 1 teaspoon
  • fresh ginger (grated) - 1 teaspoon
  • garlic (minced) - 1 clove
  • sesame seeds - 1 tablespoon
  • salt - to taste
  • black pepper - to taste

Steps

  1. 1. Start by marinating the chicken breast in a mixture of soy sauce, sesame oil, honey, grated ginger, minced garlic, salt, and black pepper for at least 15 minutes.
  2. 2. While the chicken is marinating, wash and dry the spinach, then place it in a large bowl along with the sliced bell pepper and julienned carrot.
  3. 3. Heat a non-stick skillet over medium heat and cook the marinated chicken for about 6-7 minutes on each side or until fully cooked and golden brown.
  4. 4. Once the chicken is cooked, remove it from the skillet and let it rest for a couple of minutes before slicing it into strips.
  5. 5. In the same skillet, add a little more sesame oil if needed, and briefly sauté the green onions until just tender, about 1-2 minutes.
  6. 6. Add the sautéed green onions to the bowl of spinach and vegetables, then top with the sliced chicken.
  7. 7. For the dressing, whisk together the remaining soy sauce, rice vinegar, and a drizzle of sesame oil, then pour it over the salad.
  8. 8. Toss everything gently to combine, sprinkle with sesame seeds, and serve warm.
