- chicken breast - 250 grams
- fresh spinach - 150 grams
- bell pepper (sliced) - 1 medium
- carrot (julienned) - 1 medium
- green onions (sliced) - 2 stalks
- sesame oil - 1 tablespoon
- soy sauce - 2 tablespoons
- rice vinegar - 1 tablespoon
- honey - 1 teaspoon
- fresh ginger (grated) - 1 teaspoon
- garlic (minced) - 1 clove
- sesame seeds - 1 tablespoon
- salt - to taste
- black pepper - to taste
Steps
- 1. Start by marinating the chicken breast in a mixture of soy sauce, sesame oil, honey, grated ginger, minced garlic, salt, and black pepper for at least 15 minutes.
- 2. While the chicken is marinating, wash and dry the spinach, then place it in a large bowl along with the sliced bell pepper and julienned carrot.
- 3. Heat a non-stick skillet over medium heat and cook the marinated chicken for about 6-7 minutes on each side or until fully cooked and golden brown.
- 4. Once the chicken is cooked, remove it from the skillet and let it rest for a couple of minutes before slicing it into strips.
- 5. In the same skillet, add a little more sesame oil if needed, and briefly sauté the green onions until just tender, about 1-2 minutes.
- 6. Add the sautéed green onions to the bowl of spinach and vegetables, then top with the sliced chicken.
- 7. For the dressing, whisk together the remaining soy sauce, rice vinegar, and a drizzle of sesame oil, then pour it over the salad.
- 8. Toss everything gently to combine, sprinkle with sesame seeds, and serve warm.
