- Sweet potato - 200 grams
- All-purpose flour - 250 grams
- Warm water - 120 ml
- Yeast - 5 grams
- Sugar - 10 grams
- Salt - 2 grams
- Olive oil - 15 ml
- Green onions - 2 stalks, chopped
- Carrot - 50 grams, grated
- Soy sauce - 15 ml
- Ginger - 5 grams, minced
Steps
- Peel and steam the sweet potato until tender, about 15 minutes. Mash and set aside.
- In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until frothy.
- In a large bowl, combine the all-purpose flour and salt. Create a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let it rise for about 30 minutes until doubled in size.
- In a separate bowl, mix the mashed sweet potato, chopped green onions, grated carrot, soy sauce, and minced ginger to make the filling.
- Once the dough has risen, punch it down and divide it into 6 equal pieces. Roll each piece into a small circle.
- Place a spoonful of the sweet potato filling in the center of each circle. Gather the edges and pinch to seal the bun.
- Place the buns on parchment paper in a steamer basket, cover, and let them rise for another 10 minutes.
- Steam the buns over boiling water for about 15 minutes until cooked through. Serve warm.
