Ingredients

  • Sweet potato - 200 grams
  • All-purpose flour - 250 grams
  • Warm water - 120 ml
  • Yeast - 5 grams
  • Sugar - 10 grams
  • Salt - 2 grams
  • Olive oil - 15 ml
  • Green onions - 2 stalks, chopped
  • Carrot - 50 grams, grated
  • Soy sauce - 15 ml
  • Ginger - 5 grams, minced

Steps

  1. Peel and steam the sweet potato until tender, about 15 minutes. Mash and set aside.
  2. In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until frothy.
  3. In a large bowl, combine the all-purpose flour and salt. Create a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let it rise for about 30 minutes until doubled in size.
  5. In a separate bowl, mix the mashed sweet potato, chopped green onions, grated carrot, soy sauce, and minced ginger to make the filling.
  6. Once the dough has risen, punch it down and divide it into 6 equal pieces. Roll each piece into a small circle.
  7. Place a spoonful of the sweet potato filling in the center of each circle. Gather the edges and pinch to seal the bun.
  8. Place the buns on parchment paper in a steamer basket, cover, and let them rise for another 10 minutes.
  9. Steam the buns over boiling water for about 15 minutes until cooked through. Serve warm.
