Ingredients

  • Firm tofu - 400 grams
  • Cornstarch - 3 tablespoons
  • Vegetable oil - 3 tablespoons
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Pineapple chunks - 150 grams, canned or fresh
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Brown sugar - 2 tablespoons
  • Tomato ketchup - 2 tablespoons
  • Vegetable broth - 100 ml
  • Sesame oil - 1 teaspoon

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
  2. In a bowl, toss the tofu cubes with cornstarch until evenly coated.
  3. Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium-high heat. Add the tofu and fry until golden brown on all sides, about 8-10 minutes. Remove the tofu and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the garlic and ginger for 1 minute until fragrant.
  5. Add the diced red and green bell peppers and pineapple chunks to the skillet. Stir-fry for 3-4 minutes until the peppers are slightly tender.
  6. In a small bowl, mix together the soy sauce, rice vinegar, brown sugar, tomato ketchup, and vegetable broth. Pour this sauce over the vegetables in the skillet.
  7. Bring the sauce to a simmer and let it cook for about 2-3 minutes until it thickens slightly.
  8. Add the fried tofu back into the skillet, tossing gently to coat it with the sauce. Cook for an additional 2 minutes.
  9. Drizzle with sesame oil and garnish with chopped green onions before serving.
