Ingredients
- Firm tofu - 300 grams
- Red bell pepper - 1 medium
- Zucchini - 1 medium
- Mushrooms - 100 grams
- Soy sauce - 2 tablespoons
- Sriracha - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cornstarch - 2 tablespoons
- Wooden skewers - 4 (soaked in water for 30 minutes)
Steps
- Press the tofu to remove excess moisture, then cut it into 2.5 cm cubes.
- In a bowl, mix soy sauce, Sriracha, sesame oil, minced garlic, and grated ginger to create a marinade.
- Add the tofu cubes to the marinade and let them soak for at least 15 minutes.
- While the tofu is marinating, cut the red bell pepper and zucchini into 2.5 cm pieces and prepare the mushrooms by removing the stems.
- After marinating, toss the tofu cubes in cornstarch to coat evenly.
- Preheat the grill or grill pan over medium heat.
- Thread the marinated tofu, bell pepper, zucchini, and mushrooms onto the soaked skewers alternately.
- Grill the skewers for about 10-12 minutes, turning occasionally until the tofu is golden and the vegetables are tender.
- Serve the skewers hot, drizzled with any remaining marinade.
