  • Bell pepper (sliced) - 1 medium
  • Carrot (julienned) - 1 medium
  • Zucchini (sliced) - 1 medium
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Vegetarian oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Vegetable broth - 200 ml
  • Spring onions (chopped) - 2 stalks
  • Cilantro (for garnish) - a handful
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the rice noodles in hot water for about 15 minutes or until softened, then drain and set aside.
  2. In a large non-stick pan, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  3. Add the vegetarian shrimp to the pan and stir-fry for 3-4 minutes until they are heated through and slightly browned.
  4. Incorporate the sliced bell pepper, julienned carrot, and zucchini into the pan. Stir-fry for an additional 5-6 minutes until the vegetables are tender but still crisp.
  5. Pour in the vegetable broth, soy sauce, and vegetarian oyster sauce. Stir well to combine and let it simmer for 2-3 minutes.
  6. Add the drained rice noodles to the pan and toss everything together gently, ensuring the noodles are well-coated with the sauce.
  7. Season with salt and black pepper to taste. Cook for another 2-3 minutes until everything is heated through.
  8. Serve hot, garnished with chopped spring onions and fresh cilantro.
